Brown Sugar Cinnamon Cookies

Today was an impromptu baking day. Skimming through my recipe book, I figured what a better way to spend a cold, gray winter day than with brown sugar cinnamon cookies.

Ingredients:

  • 1 cup butter, softened
    • Be sure to use real butter so there’s no margarine for error
  • 1 1/2 cup brown sugar
  • 1 egg
  • 2 1/4 cup flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 tsp cinnamon
  • 1 10 ox bag of cinnamon chips

  1. Preheat oven 375 degrees
  2. Combine butter and sugar and beat until creamy
  3. Add the egg and mix well
  4. Place flour, baking soda, salt and cinnamon in a separate bowl
  5. Add flour mixture to butter mixture
  6. Stir in cinnamon chips
  7. Bake 8-10 minutes (until edges are set)
  8. Let cookies cool for 1 minute on baking sheet before removing – this is really important otherwise the cookies will fall apart

Be sure to stick to the ingredient amount listed above and, as hard as it might be, don’t over-do it on the cinnamon. It will throw off the ratio and change the taste – believe it or not but there is a thing as too much cinnamon.
