Country Cinnamon Apple Bread

I’m a notorious late-night snacker. Come 10:00 every night, you can find me shuffling through the cupboards looking for something to eat. Which is exactly why I refuse to buy cookies, ice cream, chips and candy for my house because I will inevitably find myself eating an entire box of Oreos at midnight (I have an issue with late-night portion control too).

Sometimes though, the craving is too strong and I will ravenously scour Pinterest looking for something to whip up.


This weekend, the result was Country Apple Fritter Bread or as I took to calling it when stuffing my face with the second piece, Perfect Gooey Cinnamon Apple Bread of Heaven.



  • 1/3 cup brown sugar
  • 1 tsp ground cinnamon
  • 2/3 cup white sugar
  • 1/2 cup softened butter
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups flour
  • 1 3/4 tsp baking powder
  • 1/2 cup milk
  • 2 apples (peeled and chopped) combined with 1 tsp cinnamon and 2 TBS sugar
  • Glaze:
    • 1/2 cup powdered sugar
    • 2 TBS milk


  1. Preheat oven to 350 degrees and spray a 9×5 loaf pan
  2. Mix brown sugar and cinnamon in a bowl then set aside
  3. In another bowl, beat sugar and butter until creamy
  4. Beat in eggs one at a time
  5. Add vanilla extract
  6. Combine flour and baking powder then add to butter mixture until well blended
  7. Mix milk into batter until smooth
  8. Pour half the batter into loaf pan
  9. Add half the apple mixture
  10. Add half brown sugar/cinnamon mixture
  11. Pour remaining batter then apples then brown sugar/cinnamon mixture into pan
  12. Pat apples down then stir the layers together
  13. Bake for 50-60 minutes (after about 20 minutes, the smell of apples and cinnamon will fill your house making it smell like a dream)
  14. Let sit for at least 15 minutes to cool before adding glaze (just mix the two ingredients and pour over top)




For once in my life I can’t think of the words to articulate how delicious this bread is so I’ll just leave you with this:
