While there are few things I love more than dancing around my kitchen, singing along to my record player, waiting to remove deliciously sweet and gooey baked goods from the oven, I know not everyone feels the same way.
Whether you’re a born baker or a natural disaster in the kitchen, I promise you this is the foul-proof recipe of your dreams. Now, I’m not exaggerating when I say this is the easiest recipe (and one of the most delicious) in the entire world.
Here’s what you’ll need:
- 1 cup softened butter
- 2 cups sugar
- 2 eggs
- 2 cups buttermilk (or 2 cups milk + 2 TBS lemon juice – mix then let sit for a few minutes)
- 4 cups flour
- 2 tsp baking soda
- Cinnamon Sugar:
- 2/3 cup sugar
- 2 tbs cinnamon
Preheat your oven to 350 degrees. While it’s warming up, cream together your butter, sugar and eggs.
Add your milk, flour and baking soda – alternate between milk and flour.
As that’s mixing into a light, fluffy piece of Heaven, combine your sugar and cinnamon in a separate bowl.
Pour half the batter into a greased loaf pan.
Sprinkle 3/4 of the cinnamon sugar mixture on top then add remaining half of batter and top with the last of the cinnamon sugar.
Take a knife and swirl it all together.
Place it in the oven and bake for 45 – 50 minutes. In the meantime, as your house becomes filled with the mouth-watering smell of cinnamon, I highly recommend a little dance cardio around your kitchen.
Any time I bake anything with cinnamon, my album of choice is Louis Armstrong. Not sure what it is about cinnamon but it seems to go perfectly with my favorite crooner!
My recipe says to let it cool for 20 minutes before removing but I disagree. Let it cool for about 5 minutes then slice yourself a piece, add a chunk of butter and eat it warm.
Perfect for lunch, late night snack or weekend brunch *nudge nudge, wink wink*
