I have for you the best, most flavorful and savory recipe that has ever existed and it’s healthy too. It’s carb-free, guilt-free and the epitome of clean eating. Did I mention it’s beyond easy to make?
Now, bear with me and promise to hear me out when I tell you why it’s guilt-free. Are you ready? It’s made entirely out of vegetables. You better not leave! You promised you’d listen.
How can you make rice out of vegetables you’re probably asking. The answer: Cauliflower.
For this recipe you’ll need:
- 1/2 – 1 head of cauliflower (cut into manageable pieces – it’s much easier to blend)
- 1 cup of mixed vegetables
- 1 TBS + 1 tsp of olive oil
- 2 eggs
- Spices of choice (I use ground black pepper and onion powder)
First, take your cauliflower and put it in the blender or food processor and mix until it has the consistency of rice. *Or you can buy a package of riced cauliflower from Trader Joes if you want to save time
Pour 1 TBS of olive oil in a skillet and turn the heat up to med-high.
Add your cauliflower and vegetables
Stir it around for a few minutes until the cauliflower becomes soft. Add your spices
*While this is cooking, combine in a separate bowl your eggs and 1 tsp of olive oil (mix well)
Scoop everything to the sides, creating a hole in the middle and pour your egg mixture in then scramble it up until completely mixed.
You can eat it plain or drizzle a little soy sauce on top for some extra flavor
