Healthy Avocado Pasta

Do you fall into the sale trap? You know, when you see something on sale, even if it’s expensive and something you don’t love, you still want to snatch it up because “it’s a great sale”?

Happens to me all the time. Especially with avocados.

If avocados are on sale, I will buy them and then frantically Pinterest for a new, delicious recipe when I get home.

My avocado recipe of choice this week: Healthy Avocado Pasta

Avocado Pasta

For enough pasta for a group, you will need:

  • 3 avocados
  • Box of whole wheat pasta
  • Fresh Parmesan (2 TBS + extra to sprinkle on top)
  • Basil (fresh leaves – around 5 – or ground basic to taste)
  • Half a lemon
  • 3 – 4 TBS olive oil

Boil your water and cook your pasta to al dente.

While that’s cooking, add avocado, lemon juice, 2 TBS oil, basil and 2 TBS parmesan to a blender and pulse until creamy.

When pasta is cooked, drain water then put pasta back in pot. Drizzle 1 – 2 TBS oil over noodles then mix in avocado sauce.

Sprinkle with basil and parmesan and serve warm.

Thick and creamy like Alfredo sauce but much more light, fresh and healthy.

Super comforting on a wintery night but light enough to be the perfect meal to eat outside in the summer with a big glass of white.

You have to love a pasta that doesn’t make you feel like you should be rolled out of the kitchen when you’re done eating.

You’ll probably even have some room for dessert, I highly recommend keeping with your healthy meal trend with my delicious, diet friendly brownies!

      I’m a huge Alfredo lover too! The taste for this is more lemon and basil than avocado – the avocado works mostly to make it deliciously creamy! Hope you like it! X

    I love avocado and parmesan, so mixing all this together with pasta – I can imagine that it must taste super delicious!
