Healthy Rice

A few weeks ago, I posted one of my very favorite recipes of all time – Guilt-Free Fried Rice. Rich in flavor, delicious and sneakily healthy.

Well, with spring right around the corner (I squealed a little writing that), I thought it was high time to post a lighter healthy rice option.

I first found this recipe last year on Blogilates – the best go-to spot for recipes if you’re looking to start eating healthier. I honestly can’t recommend her enough!

This recipe is just as delicious as the fried rice and equally as healthy.

Healthy Rice Recipe


  • 1 cup of celery
  • 1 white onion (to taste)
  • 1 head of cauliflower
  • Olive oil

Healthy Rice Ingredients

Cut off the cauliflower florets and put them in a food processor until they’re the consistency of rice.

Cauliflower Rice

Throw your onions in some olive oil on a skillet and sauté until soft and fragrant.

Add your celery.

Fried Onions

When both veggies soften, add your cauliflower and cover.

When the cauliflower softens, uncover, season with some salt and pepper and serve.

No Carb Rice

Throw in a container and bring as a snack to work, use as a side for dinner or give into temptation and eat immediately.

Healthy Cauliflower Rice

Perfectly guilt-free, carb-free, filling and healthy.

Light enough to eat during the spring but savory enough to disguise the fact that you’re eating all veggies!
