Quick and Easy Eggnog Cupcakes

It’s officially holiday potluck time. I love the concept of potlucks. Everyone brings something sweet or savory, store bought or generations long homemade recipe. It’s a great way to try different things and an even better excuse to eat as much as you want!

The only thing I don’t love about potlucks? They tend to be on week days. I don’t know about you but on week day nights, the last thing I want to do is spend more time than I have to in the kitchen.

If you’re like me, I have the recipe for you. It utilizes one of the best holiday flavors, has minimal cleanup, is quick to make and eye-lollingly good.

I give you, one bowl eggnog cupcakes.

First, preheat the oven to 350 F and line a muffin tin.

In a large bowl, add:

2 1/4 C + 3 TBS Flour

6 TBS Cornstarch

2 C Sugar

1 TBS Baking Powder

1 tsp Salt and combine them all together.

Add 2 sticks of softened butter, cut into small cubes

1 TBS Vanilla

Mix until the batter looks like course meal

Add 4 large eggs, one at a time while mixing

Add 1/4 C Sour Cream

1 C Eggnog and mix until completely combined

Pop in the oven for about 19 minutes or until the tops are golden.

When they’re done cooking (and your house is full of the smell of rich vanilla), place them aside to cool and begin working on your frosting.

Beat 2 sticks of butter on medium speed until smooth.

I would definitely recommend softening the butter first – it cuts your mixing time in half.

Reduce mixing speed to low and gradually add 4 – 6 C Powdered Sugar (it’s up to you how much you want, I used 4 1/2 C) and beat until smooth

Add 1/8 – 1/4 C Eggnog (depending on your taste preference)

1 TBS Vanilla

Beat until completely combined and slightly stiff.

Slather on your cooled cupcakes and decorate however you want!

Whether you’re a lover of eggnog or not, these cupcakes are sure to get a smile and a groan from even the biggest Scrooges.
